The story of our coffee

oNE OF THE FIRST THINGS WE LEARNED when we first visited WAS HOW GREAT THE LOCAL COFFEE WAS ON rOATAN. THAT IS BECAUSE THE BEANS THAT GROW IN THE MOUNTAINS OF THE cOPAN REGION OF HONDURAS ARE THE BEST IN THE WORLD. Our COFFEE COMES DIRECTLY FROM A SMALL FINCA (FARM), owned and operated in the same artisinal ways they have for generations, with no chemicals and no machines. WE HELP THE PEOPLE IN THe copan AREA BY BUYING IT DIRECTLY FROM THEM. nO MIDDLEMEN, no brokers. It may cost us more but it is worth it for THE BEST COFFEE IN THE WORLD.

That is where the fun really begins. The cherries (coffee beans are actually the pits of a cherry fruit) are hand picked and taken to be processed, often on horseback. The cherries are spread out to dry in the sun for days or weeks. Once they are dry, the cherry fruit is removed revealing those heavenly green coffee beans. They are bagged up by hand into 100 pound sacks which are sewn closed and put on a ferry over to Roatan.

Once we get them, they are roasted in our small-batch fluidized bed roaster. The most we can roast at one time is 9 pounds. Compare that to the big commercial coffee producers that roast thousands of pounds per hour. This is why we can roast coffee that has the best flavor but still no bitterness.
